This recipe, as per usual, can be found on my YouTube channel (linked below). I love this recipe because it's so easy to substitute an ingredient for another such as eggs, if you don't have them, just add more milk or 1-2 tablespoons of Greek yogurt. If you're feeling fancy, why not go savory!
These pancakes make a fantastic, healthier Sunday breakfast. I love mine with natural Canadian Maple syrup, fresh red grapes, and raspberries. With a cup of tea and an extra helping of fruit on the side of course!
Serves: 2-3
Ingredients:
- 2 eggs
- 2-3 cups of plain flour (around 320 grams)
- 3-4 cups of milk /plant-based substitutes (around 750 ml)
- 1 1/2 teaspoons of Truvia zero calorie sweetener
- 1/2 teaspoon of baking powder
- Vanilla extract (as much or little as you please)
- Pinch of salt (optional)
Some like them plain, but if you don't, here are some sweet and savoury topping ideas...
- Berries (frozen or fresh)
- Strawberries 'n' whipped cream
- Peanut butter and banana
- Just Nutella
- Just Maple/Golden syrup
- 'Maple bacon'
- Cheddar cheese
- Sautéd Tomato and Mushrooms
Method:
- Whisk together the eggs and milk.
- Then put all dry ingredients: flour, Truvia, salt and baking powder into a small bowl (mix if you wish).
- Whisk these into the egg and milk mixture.
- Add in your chosen amount of vanilla extract.
- Cook the pancakes with Frylight for around 45 seconds- 1 minute on each side, depending on their thickness (I recommend one ladle full of mixture per pancake).
- To keep them warm, (and NOT soggy), pop them in the oven or lay them on a cooling rack.
- Once finished, top with your favourite toppings...
- And enjoy!
