Vanilla Cut-Out Cookie Recipe


Today I will be sharing what I call a 'tweaked' recipe. I found the original recipe on the beautiful blog titled: Baking a moment (Recipe and blog link is below). Her blog is so well constructed and she takes great, quality photos. Some things in the recipe I did not have such as corn starch and vanilla bean paste. Makes: Around 20 cookies depending on the thickness of the dough and size of your cutters)


  • 2 eggs
  • 4 cups of plain flour/all purpose (around 500g)
  • 1 cup of xylitol/sugar (around 200g)
  • 1 cup of flora light/butter (around 230g)
  • 1/2 teaspoon vanilla extract 
  • Pinch of salt
  1. Preheat oven to 190 degrees Celsius/375 Fahrenheit and line two-three baking trays with baking paper/parchment.
  2. Firstly cream the butter and sugar together until pale and fluffy then incorporate the two eggs.
  3. Gradually fold in the flour,salt and vanilla extract.
  4. Knead the dough on a well floured surface, (flour with plain flour, not self rising!), until it is able to form a ball.
  5. Roll it out with a sturdy rolling pin (I use my marble one) and then cut out your cookies with cutters, I used animal shaped ones.
  6. Bake for 15-20 minutes max, they should still be slightly springy an soft inside.
  7. Once cooled, you can decorate them with royal/design icing and sprinkles, cover them in fondant or just eat them plain like me!
