Here is a recipe for light and fluffy vanilla cupcakes!

VANILLA CUPCAKES
Serves: (makes 12 cupcakes)
Ingredients:
- 125g Self-rising flour
- 125g Butter/Margarine
- 80-125g Caster Sugar
- 2 eggs, whisked
- Vanilla extract (as much or little as you please)
- Milk/Plant-based substitutes (if your mixture is too dry!)
Method:
- Cream together the butter and sugar until light and fluffy.
- Whisk the eggs and then, slowly incorporate them into the mixture (along with the vanilla extract).
- Fold in the flour.I'd recommend doing this in halves or even quarters.
- Place spoonfuls of the mixture into the cupcake cases.
- Now bake for 15-20 minutes at 180 degrees Celsius/356 Fahrenheit.
- Once cooled, feel free to ice and decorate your cupcakes!
