Perfect Vanilla Cupcake Recipe


Here is a recipe for light and fluffy vanilla cupcakes!

Serves: (makes 12 cupcakes)


  • 125g Self-rising flour
  • 125g Butter/Margarine
  • 80-125g Caster Sugar
  • 2 eggs, whisked
  • Vanilla extract (as much or little as you please)
  • Milk/Plant-based substitutes (if your mixture is too dry!)


  1. Cream together the butter and sugar until light and fluffy.
  2. Whisk the eggs and then, slowly incorporate them into the mixture (along with the vanilla extract).
  3. Fold in the flour.I'd recommend doing this in halves or even quarters.
  4. Place spoonfuls of the mixture into the cupcake cases.
  5. Now bake for 15-20 minutes at 180 degrees Celsius/356 Fahrenheit.
  6. Once cooled, feel free to ice and decorate your cupcakes!
