These pancakes are packed with fibre and contain blueberries, one of the best sources of antioxidants, and also chia seeds, another 'super-food' with too many health benefits to name.
These pancakes will keep you full for hours and hours!; this recipe calls for both wholemeal flour and oats which are both great sources of complex carbohydrates (these provide you with slow-release energy - so no blood sugar spikes!).
HEALTHY WHOLEWHEAT OATMEAL BLUEBERRY & CHIA PANCAKES
Serves: 1 (400-500kcal for the whole recipe)
Dietary: Vegan & Dairy Free
Ingredients:
- 60-70g of Wholewheat/Wholemeal Flour
- 30g of Oats
- 200-250ml of any Plant-based milk
- 70g of Fresh or frozen blueberries
- 5g of Chia Seeds (optional)
- 1tsp of Baking Powder
- Stevia/Natural Sweetener
- Pinch of Salt
Method:
- Blend the oats and baking powder to create the 'oat flour'.
- Place all of the dry ingredients, (including the oat flour), into large bowl.
- WHISK!
- Gradually incorporate the milk and the vanilla extract.
- Fold in the blueberries and chia seeds.
- Cook each pancake for 1-1 1/2 minutes on each side or until golden brown.
- Serve with plenty of fresh fruit and maple syrup!😊
