Best Ever Sugar Cookie Recipe

This is by far my favourite winter cookie recipe. They're healthy, not too sweet, chewy but still have a bite to them, making them perfect for dunking into a cup of tea! You'll also be pleased to know that these have only five ingredients!















Winter Spiced Sugar Cookies


Dietary Information: No-added Sugar, Dairy-free, Vegan

Ingredients:

FOR THE DOUGH:
  • 90g Butter 
  • 80g Xylitol/Granulated sweetener
  • 300g Plain flour (+ extra for rolling the dough)
  • 20-50ml Milk
  • 1 tsp Vanilla extract (optional)
FOR THE 'WINTER SPICE MIX':
  • 1-2 tsp Cinnamon
  • 2 tsp Ground ginger
  • 1 tsp Xylitol/Granulated sweetener 
  • Pinch of Salt


Method:
  1. Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit)
  2. Cream the butter and sweetener until pale and fluffy.
  3. Gradually incorporate the flour and spice mix to form a dough, using the milk if necessary.
  4. Form a ball with the dough.
  5. You can now chill the dough for 30+ minutes, but this step is not necessary.
  6. Spread a small amount of flour onto a clean surface.
  7. Roll out the dough.
  8. Cut out shapes with cookie cutters.
  9. Put the cut-outs onto baking trays lined with parchment paper.
  10. Bake for 10-20 minutes.
