Oatmeal Pancakes (Easy, Healthy & Really Delicious)


These pancakes are SO. DAMN. GOOD. Almost TOO good! Packed with complex carbohydrates and fibre, they'll satisfy your 'sweet tooth' without giving your blood sugar levels a nasty spike! Oh, and did I mention these only have 5 ingredients?

Natvia is currently my sweetener of choice. It's the only stevia-based sweetener I've tried that doesn't have a rather gross aftertaste! I love it in cups of tea, mixed with yogurt and of course - sprinkled over my pancakes!

Oatmeal Pancakes (Easy, Healthy & Really Delicious)

Dietary Information: Vegan, Dairy free, No added sugar

  • 60-70g Wholemeal flour
  • 80g Oats (I'd recommend that you use about half-and-half of porridge oats and jumbo oats. You can blend them into an oat flour if you don't like the texture of whole oats.)
  • 210-250ml Plant-based milk
  • 1-2 tsps Baking powder
  • Pinch of salt
  1. Mix all of the dry ingredients in a large bowl.
  2. Next incorporate in the milk.
  3. Fry the pancakes for 1-2 minutes on each side on a low-medium heat.
  4. Serve the pancakes with your favourite toppings. I love the combination of fresh berries, soya yogurt, both maple and golden syrup, cinnamon and a sprinkling of Natvia natural sweetener.
