Today I am going to be sharing with you my favourite vegan pancake recipe. They're so fluffy and delicious, you wouldn't believe that they are plant-based! No bananas and no fuss!

Fluffy Whole Wheat Vegan Pancakes

Serves: 1

Dietary Information: Vegan, Dairy Free, No Added Sugar

You Will Need

320g Wholemeal flour (you can also use plain flour)
750ml Plant-based milk
11/2 tsp Baking powder
Vanilla extract (optional)
1-2 tsp Brown Sugar/ Natural sweetener
Pinch of salt


Put the flour, baking powder, sugar or sweetener, and salt in a large bowl and combine with a whisk.
Gradually incorporate the milk and whisk until a smooth batter is formed.
At this point, you can add in a few drops of vanilla extract.
Transfer the batter into a measuring jug to make pouring it onto the pan easier.
Heat up a frying pan.
Once heated, pour on ladlefuls of batter and cook the pancakes for one to two minutes on each side.
Now for the best bit. Top the pancakes with your favourite toppings. I love the combination of fresh berries, lashings of maple and golden syrup and a sprinkle of granola.
